Residential HVAC systems are not constant flow. The blowers will not speed up to compensate for increased flow resistance in the system.
A filter with more resistance to flow will actually lower the load on the motor. Most motors are mounted in the air stream, so the motor temperature might see a slight increase with reduced air flow. You would have to be at a vastly reduced air flow before the motor overheated. Most likely you would freeze the evaporator coil over first.
Load on the motor is dependent on the amount of air that the blower moves. Reduce the air flow with an air filter that has a greater pressure drop and the blower motor will do less work. (Amperage draw on motor will drop)
The system itself my run longer to obtain the same amount of cooling, due to a reduced air flow, but this would most likely only be measureable in a laboratory.
