I've had a flight from SF to Paris to Johannesburg to Durban with a 12 hour layover in Paris. Customs had no problem letting me go be a tourist for a few hours even though my ticket was ongoing.
The problem you will run into is with the airline. They will be wise to your plan and may very well cancel the return trip. You will probably forfeit frequent flyer miles. Have you looked into flying into Brussels, Amsterdam, Frankfurt or London and taking a train to Paris? It's not like you're on a 2 day biz trip and need to turn around super fast.
