Customs will be fine with it (you even have a return ticket, though they probably won't ask for it). However, airlines will cancel your whole trip if you miss a leg, at least in the US. I don’t know if this applies in Europe (different consumer protection laws and what not), so you may want to ask your specific airline about this, being sure to speak specifically with the international travel folks if it’s a US airline.
I had a trip scheduled going through New York to Montreal and decided to do a layover in NY. The price to add the layover was extravagant, so I suggested to the airline that I make my own way to NY and pick up my itinerary there. They said this would cancel my whole trip, but would be happy to charge me $50 for the privilege of not flying on the first leg. I’m sure it’s policy, but I found it frustrating that the lady on the phone wouldn’t acknowledge that it was strange that she wanted to charge me more money to fly on fewer flights.
In addition to Randy’s ideas, you may want to consider going through Iceland. I did this once a few years ago and also enjoyed a layover there for a couple of days. Have you tried Kayak.com? They search a large number of airlines and often find better deals than Travelocity, etc.
