Aside from being able to haul a bunch of people & stuff, the Suburban is useful due to the length of the truck and the added weight over the rear wheels vs. a pickup. Towing with an unloaded Suburban is SOOO much more stable than an unloaded pickup it's worth it for that alone.
My Suburban sits in the driveway 355 days per year - the other 10 it's towing something. :)
Personally I look at older trucks - for limited use vehicles, having to maintain ABS & SRS systems and complicated engine management can be a hassle. So can gobs of plastic trim parts and all that extra weight. And, of course, messing up a $10,000 truck with axle grease and brake fluid sucks. You don't feel so bad about a $2000 truck. :) Take out the rear carpet, lay down some Rhino Liner (etc.) and go racing.
I'd also strongly advise a 3/4 ton. Don't even mess around with the 1/2 ton. You'll want the extra capacity for spare engines in the back and the bigger brakes etc. Some places won't even rent flatbed trailers to 1/2 ton trucks... If it's gonna be a daily driver, a smaller truck may make some sense, but if we're talking dedicated tow vehicle, get a beefy one.
