I think it's important to clarify that double clutching is really most effective on down-shifts.
You're right that a short pause between 1-2, 2-3, etc will give the input shaft time to slow to the new speed.
However, when shifting from 3rd to second, the engine (and input shaft) are already going slower then they will be going when the gear is engaged, so double clutching allows you to speed up the input shaft. Press the clutch to take it out of gear; engage the clutch and then rev the engine to speed up the input shaft. Then, press the clutch again to select the next lower gear. If you do it right, there should be absolutely no resistance in the gear selector because the synchros aren't actually doing anything and therefor not giving resistance. (This means you're not wearing your synchros, which can wear out. One of the ways your transmission can go bad).
So, while modern cars are quite likely to see no significant benefits from double clutching from a longevity/maintenance perspective, it can't hurt in the long run (if you're doing it right), and it's actually very fun when you get it down. And, under spirited driving, an abrupt down shift can unsettle the car in dangerous ways, as mentioned.
The next step would be the "heel-toe" method of double clutching while you're hard on the brakes. It allows you to double clutch while braking for the corner. The relative locations of the brake and gas pedal are important for this, as is the size of your foot, and your willingness to completely mess it up the first few times. (Do it somewhere without any traffic.)
