I wouldn't use straight water. As others said, there is no corrosion protection or added boilover protection.
However, water does transfer heat more efficiently than glycol.
What you could do is drop the dilution to say 20-25%, which still gives you the corrosion protection, but somewhat less boiling protection, but since the mixture transfers heat better than the 50-50 mix, you're still in good shape.
don't forget that the system pressure increases the boiling point as well as the antifreeze.
Red Line's Water Wetter is a good additive, too.
Don't forget to keep the whole system in good condition!
