When a dealer tells you, "We can get whatever you want," that's what he means. I'd say you need to have a pretty good relationship with the dealer for it to work for buyer and seller.
It's true that with the Internet you can probably find the car you're looking for by yourself. My missus once road-tested a used Saab at a dealer near us, but didn't like the price and ended up buying one from 300 miles away. She drove it over to show the salesman her new-to-her car:-) She couldn't understand why her old salesman wasn't happy for her.
But suppose you have a long-relationship with a dealer, and the dealer keeps a small inventory of cars you'd be interested in. In this case, it shouldn't be too hard to diplomatically explore the "ordered car" option, establish a price for the service and come out in decent shape. You probably won't get the absolute rock-bottom price, but if you're going to "buy and hold", that shouldn't be a worry.
