Well, the Ritz plan is definitely a ripoff - you could almost buy a second camera body for that price and keep it as a backup! The B&H plan is not as ridiculous, but as others have said, if it's going to fail it will probably happen within the manufacturer's warranty period (1 year for Canon). However, I looked up the B&H plan, and one interesting aspect is that if the product is damaged beyond repair, they'll refund your full original purchase price instead of replacing it with another - which means you could use that cash to buy a newer, better item as prices drop over time.

As for brand choice, when I first got into dSLR photography, I bought a secondhand Canon Rebel 300D fairly cheap, but since a good friend of mine had a 40D and some excellent lenses for it, I was able to try his stuff on my camera without investing any more money. I do have another friend who's a pro and has a Nikon as her personal camera, but I hardly ever see her so that doesn't really factor in. Having compared my Rebel to my friend's 40D, I definitely hope to upgrade to a 30D or 40D eventually, but I'm glad I've learned the specific reasons why - not just that "it must be better because it costs more!"

Anyway, once I decided I was taking the hobby more seriously, I started acquiring other lenses from Canon's EF-S series. My most recent purchase was a 55-250mm f/4.0-5.6 with image stabilization for just $200, which would get you what the Nikon package offers, plus a little extra zoom range. As for a bag, take the time to shop around for one that suits your needs, as you might end up not liking the one with the Nikon kit.
