Out of your DVD player, yes, all you're getting is 480i, maybe 480p (depends on the player). But that's OK, because the DVD standard is only 480i... (some DVD players can upscale to 1080, but often only with the HDMI out. Mine does that. Component - which happens to be the DVD's native format - is 480i.)
If you get a Blu-ray player, and connect it with Component, you'll be able to get up to the max that your set can receive and display. It can also upscale DVDs to 1080.
Blu-ray (and the now defunct HD-DVD) is great on any HDTV, 720p included.
