I bet there are a few more parts for the 9-4x in inventory than went into production... and as you say, the demand should be miniscule... so even a few extra body panels should be fine for only 1000 cars.
electrical "doodads" do fail it's true... and there are probably some saab specific items, particularly in the interior. That said, the underlying switch behind the push button is what is most likely to fail not the button itself, and that underlying switch is not likely to be saab specific... so my feeling is that in most cases there are workarounds but they may not be all plug + play (but if you diy or go to an indy vs a dealer, that's usually not a problem)...
one unfortunate thing with modern cars is that parts in general are less repairable than decades ago. A turn signal stalk for a c900 is still available, but if it wasn't, it wouldn't matter to me (even though they regularly wear out)... completely repairable with a tiny amount of machine work and negligible cost... I've never bothered to buy a new one, or even a used one from a junkyard!
probably the most problematic item long term would be headlights/tail lights as they do occasionally get smashed without other damage to the car + the ones in the 9-4x would likely be specific to that model...
