I googled the ATM question and it seems as though the lack of a chip is not likely to be a problem at bank ATMs, or widespread places like Credit Agricole in France. If it is you can always walk into a bank and talk to a real person. Most traders/restaurants will be happy to swipe your card or let you sign a paper slip: they do this for residents if the chip reader doesn't work properly.

If I use a card abroad on a trip the provider will sometimes call me to check up and frankly it doesn't seem to matter whether I called them in advance or not, or whether I regularly use that card on mainland Europe. But calling the provider must be a good idea, and also doing that before you leave makes sense, for obvious reasons!

FYI - people over here (UK/Yurrop) generally dislike taking Amex cards, even if they can - they say the cost is too high. I have a seldom-used Amex European card and it's chipped - when I use it in the States it takes just as long to authorise as a UK Visa card so I guess the US and Europe versions are treated as different animals

Finally, taking a couple of different cards is another good idea as mentioned in other posts
