If the inverter's ratings are honest, you should be fine - as you say the battery will supply the extra current to start the pump.
My biggest worry would be that the inverter's ratings are exaggerated - that's pretty frequent with electrical equipment these days. Go look at a shop-vac rated "3 horsepower" and then do the math to find out you can't get 3 horsepower worth of electricity out of a regular 120V outlet!
Anyhow, a few other random bits of advice:
1) the alternator may not produce output unless you hook up a small bulb to the terminal normally used for the alternator light in the instrument cluster. Power coming into that terminal is used to "jump start" the alternator - once it starts producing output, it's internal needs are met by its own output.
2) Make sure it's spinning at high enough RPM or you won't get full output. Keep in mind there's probably at least a 3:1 step-up ratio between the Saab engine crankshaft pulley and the alternator. So if the alt produces max output at 5000 crank RPM (which would be typical), the alternator needs to actually be spinning at 15K RPM!
3) Probably the most important point of all: TEST this setup before you actually need to use it!
