I don't know specifically about Passats, but on A4s you don't need to pull the whole front carrier off. You just need two long bolts to slip it into the "service position." Just did the timing belt/water pump/everything else on our A4 and it only took about six hours. The two should be very similar up front.
The service activities on these cars it not that obscene if you do things the way the factory intended. The thing that kills you is the quantity of parts that are designed to be replaced... like the suspension. ;)
