Most car shippers and probably especially ones that deal in classic cars can handle a non-runner. Just be sure to specify it when you get a quote. Trust me, you're not the only one to ship a project! Can the owner not fit everything in the car? I do doubt a car shipping company would be able to accommodate additional parts (though it's worth asking), but if the owner can pallet them up a freight expediter could probably move them cheaply.
Flying in and renting a truck could be a fun road trip, but not necessarily cheaper than shipping it once you factor in the gas at 10mpg, but it varies a LOT by route - eg south to north is far cheaper than north to south because yankees love moving south, hence a glut of trucks down there :) Try some online quotes from Budget, Penske, and Uhaul (I highly recommend the first two). They all rent trucks and car trailers. A come-a-long will get the car on the trailer with the bonus of a great arm workout.
