I tend to like instrumentals for spirited driving. A couple of my favorites:

Nighttime, cruising with the top down has to be "Pipeline" by the Ventures.
I love Hoyt Curtin's extended version of the Theme from Jonny Quest.
Also like "Jessica" by the Alman Brothers
"Hocus Pocus" by Focus
"Cruise Control" by Dixie Dregs

Even like some obscure stuff like "Jaan Pehechan Ho" by Mohammed Rafi (you might recognize this from Heineken commercials, but it's actually from around 1965--from a Baliwood movie). You can see, my taste is all over the place. :-)

I have to agree with the Radar Love and Hot Rod Lincoln suggestions too. Can't forget Bruce's "Born to Run" or the Doors "Riders on the Storm".
