Private car sales, many questions

There's a reasonable chance in the next couple of months I may be both
selling and buying a car privately, and I've got lots of questions.
I've never actually sold a car, they've all been given away, junked,
or traded in (yes, leaving money on the table, but it's so convenient
and they really were all close to worthless). On the other side, except
as a kid I've never bought a car in a private sale, always from a dealer.
So the questions:
How formal do you make things? Do you just shake and hope the check
clears or the guy is still there when you come back with the tags?
Or do you ask for ID and sign a purchase and sales agreement?
Do you insist on a cashiers check? Wait for it to clear?
Or ask for a deposit, wait for it to clear, then take that as good
faith?
What about price negotiation. What I've got to sell isn't worth
that much, so I'm not going to be hard- um- nosed about it, but
on the buying side, am I a putz if I'm ok with the advertized price
and say "sure fine", or do I have to do the manly thing and argue?
And what about tags? I can't see the new buyer driving off with
the old tags. Is the buyer responsible? And how does this work
if you've got to bring the title to the DMV? Again the trust issue,
is the seller going to be there when you come back with the tags?
Or do you just hop in, drive it home without tags, and hope if you
get pulled over it's an understanding cop?
Any other advice? I'm apprehensive about the whole thing, but
insisting on buying only from a dealer limits my options, and on
the selling side, I'd rather not let a pretty good body and a
lot of SAAB parts go to waste.
