I would go with composite cable carrying two rg6 and two cat5/cat6 to each room. That's all you need. You can essentially run anything you'd like on those two types of wire natively or through converters - whether it be phone, cabletv, Ethernet, video, or whatever. You can use Leviton's structured wiring cabinets in a central location to manage it all and their modular keystone jacks in the walls to terminate everything. I highly recommend a couple drops in spread out places that you wouldn't normally think of - for example in a crawl space between bedrooms or in closets. Highly likely within the next few years Ethernet wiring is going to disappear nearly entirely - modern wireless is capable of gigabit+ speeds and more and more devices are wireless-only. Leaving drops in out of the way places will allow you to install wireless access points to build a cohesive wireless network with a wired backbone.
Most electricians have no idea about any of this (I deal with that daily), so I'd talk to someone who does low voltage structured wire and have them flesh out the plan. I'd also talk to someone knowledgeable about LED lighting - building natively for low-power LEDs is a lot better (IMHO) than running 120v everywhere and using common retrofit fixtures... it's not like we're going back to 120v! Consider wrapped an LED lighting scheme into the wireless network you're building for to take advantage of modern home automation - Insteon or Vivent or whatever.
Building all this stuff in is pretty cheap compared to having to retrofit, and in 2014 I think it's safe to say we have a good idea of modern homes will look like for the next decade or two.
