Regarding the new temperature sensors that you installed, have you actually measured resistance at a couple of points and verified that they are working properly? I replaced the Coolant Temperature Sensor (CTS) on my former Audi A6 (a painful job requiring removal of the intake air pipes and PCV tubing, which breaks due to the fragility of aged plastic) only to find that the new aftermarket part (what they had at my local autoparts store) was defective and caused more issues than the existing part. Eventually found that I had a defective thermostat, a much more intensive replacement job on Audis and VWs with V6 engines.
Not sure if this is any help, but on my 1970 Volvo 1800E, I was also having a hot weather acceleration issue from idle, and eventually found that it was due to idling too rich which was loading down the spark plugs with gasoline.
