Finding a "new" one at this point probably is hopeless as most of the final production run cars ended up at dealers and have been sold or bought up by wholesalers and sold.

I was in the same boat as you and had planned at one point to replace my 2000 9-3 with the new 9-3 hatch they were working on (based off the Phoenix concept) before the bankruptcy, but when that did not occur, I kept my 9-3 and then last year bought a 2008 9-5 SportCombi in immaculate shape from an classified ad here on Saabnet. I have been very happy with it and plan to keep it for quite a while.
