No idea about value but a GT750 (based on the 93) would probably be more desirable from a collector stand point although it would also be a lot less drivable on the road so the 850 Monte Carlo (based on the 96) might be a better choice. Just about any stock GT750 should have all the rally goodies because it was essential built and sold to be raced although some may have seen only general service. The 850 Monte Carlo was aimed more at the "general" market as the high end sport version of the 96 although some would have been prepared for competition and features like the Halda Speed Pilot rally computer were an option. There was also a GT850 that predated the 850 Monte Carlo but I am not sure about how that car may have differed.
No expert on the engine but most all the 850 Monte Carlos had the 2 stroke engine with oil injection, 3 carburetors, and a 4-speed transmission. The 850 (as with the 750) in the name is a reference to the engine size. However, I think I remember reading that there were a few 850s built with the V-4.
The GT750 with tuning kit was good for about 57hp, 0-60 in 12 sec and 100mph. The 850 Monte Carlo had about 60hp and I assume similar performance numbers but without the low speed fouling problems caused by squeezing so much power out of the smaller 750.
