I've struggled with the decision about how to deal with security and my convertible. I had a friend in high school who had just put a brand-new top on a 1968 Camaro convertible. He always left the doors unlocked, on the theory that if someone wanted to steal the car bad enough they'd just cut through the top anyway. He'd rather they took the car and left the top intact, just in case it was recovered later. Even if it wasn't recovered, leaving it unlocked wasn't any less secure than "through the roof" access.
I usually park my car in a garage, and if the weather is nice I just leave the top down. BUT, I always lock the car using the remote as I leave. Any idiot who grabs the lock tab and pulls up on it, thinking they're getting an easy joy ride, is in for a surprise. Unlocking manually after locking with the key fob sets off the freaking loud alarm :-)
