The mods that will make any difference in your car are the upgraded APC/Injectors and free-flow intake. Some nice handling mods. Most everything else (new hoses) aren't performance improvements - they're just a way to fight off the ravages of time (it IS a 14 year old car).
The question I have is about the AMM at 250 ohms. The resistance of the AMM is pretty meaningless - 250 isn't any better or worse than 200 or 750. One car will run perfectly with an AMM at 200, and the next car is best at 700 ohms. The AMM needs to be adjusted for the proper mixture. You might see some extra performance if it's set a hair rich. The purpose of the adjustment capability in the AMM is to compensate for differences in the AMM and a variety of other things in your fuel/air system. Quite frankly, you can undo all of the goodies you've put in with a mis-adjusted AMM. So make sure the AMM is adjusted right, and don't worry about the absolute resistance.
As to who is quicker, sab has it right. You won't know 'till you run it. the '03 1.8T is good for 180 horsepower. Stock, brand new, your car is about 160. Yes, you've added a bunch of mods, which should add horsepower if done right (see my AMM comments, above). But you've got a 14 year old car, and we (the universe) don't know the state of the valves, seals, piston rings, etc.
For a while I had two 1988 9000Ts. VIN numbers within about 2000 of each other, just about the same mileage. I kept both in the best tune I know how. One would blow the doors off the other. Some cars are just faster. This BB is great for doing numbers games, but until you run against the Jetta, it's all just pixels on a screen.
