Well, Volvo wagons can be ordered with a third seat, but you lose all your cargo capacity when you start hauling kids back there. And I would worry about crash risk - that is why Saab doesn't offer a third seat.
I think that you need to either get a mini van and live with the ugly thing, or get an SUV. Some of the car-based AWD SUVs are much more comfortable than the trucklets. The Mitsu Trooper Sport, for example, has a uni-body based on the AWD Gallant car chassis, while the Trooper is a real truck with body-on-frame construction and serious off-road running gear.
Don't write off all SUVs until you drive a few - there is a reason so many people buy them. They are good all-around vehicles that can carry your stuff, a bunch of folks and a trailer at the same time, and will get you through all sorts of nasty weather with relative ease.
