I've had authorized dealers do a brake flush for $40- $60. Two liters of fluid should only be $10 each, and that still leaves a half-hour to do the task.
Your dealer sounds like a real rip off. You could complain to Saab about it, but I don't expect it would help much. Your best bet is to vote with your feet - actually, just the right one, and drive off.
Find a decent independent mechanic that works on Saabs. I've got a local shop that charges around $40 for a flush. I believe they also have a Tech Tool. Get the work done there, and then stop by the dealer and ask to talk to the Service Manager. Let him/her/it know that their prices are out of line, and that means you aren't using them.
Don't expect them to change their prices because of it, but it might make you feel better.
For this advice, please send me $250 in small, unmarked bills.
