AFAIK, co-signing doesn't really help either party but can hurt YOU if she defaults. Since she does not need you to co-sign I see no logical reason to do so.
Everyone with a modest credit history pays higher rates. She is much better off establishing her credit independent of you or anyone. In time her credit rating will improve as long as she does not make any mistakes. We all gots to pays our dues in this here life.
I do not understand your "high rate/FICO" comments. They have nothing to do with each other.
If her credit rating improves in the next year or two she can always refi the car loan to something lower.
