Nothing is easy anymore with today's cars.
No, I couldn't find any resistance chart in VADIS like in the old days when you could map out a temp sensor from cold to hot.
It is only ONE test outlined and that is.
Ignition off, ECT sensor disconnected, measure resitance between pin 1 and ground (toward ECM) and it should be more than 1000 Ohm. If correct Ohm reading, replace ECT sensor.
The temp gauge on instrument is a seperate entity that is driven by the DIM (Driver Information Module) that in turn get it's temp signal from the ECM (Engine Control Module). The temp signal from ECM to DIM is a PWM signal between 0 and 5 volt with a duty cycle of 45Hz at +25°C and 20Hz at +100°C.
So when you are using a generic scan tool hooked up to the OBD 2 socket, you are reading the ECM temp signal based on what the ECT sensor is sending to ECM.
With my laptop and VADIS plus the interface box VCT2000 I can double check what the ECM receives from ECT sensor and then what the DIM receives from ECM.
I would replace both ECT sensor and thermostat. I beleive that in this case it is the ECT sensor being bad but since the thermostat WILL go bad too, you should replaced it in pair.
When you unplugged the ECT sensor I assume the temp gauge dropped down to cold too?
