Low seat, low suspension, oil heads... Oilheads, the 1st generation of 4 valve SOHC, paralever telelever bikes spanned 1993 to 2004ish. The were 1100's and later 1150's and they made an R1100R standard/naked/R/Roadster and an R1100RS a "tweener" halfway between the touring R1100RT and the naked R1100R. There was also a sport model the R1100S and the popular R1100GS.
5'10" is close to what I am lately. Was "6'0" in the day, but now 5'10" ish 210 lbs, 36x30 jeans, so most of the BMW's are pretty normal for me and should be for you, that is unless you too were 5'10" in the day...... A low seat or low suspension is likely unnecessary, but available if you feel more comfortable. All of the R1100 models have adjustable seat heights and come with a variety of seat heights.
The R1100GS dual sport model is somewhat tall, but later models are quite reasonable, especially the newer R1200 models from 2005 and up, the "hexheads".
In the later R1200 hexheads, 10% lighter, 30% more powerful and a smooth gearbox, the R1200RT, R1200R and R1200GS models are available in an actual low suspension model with sidestands and centerstands factory trimmed too, that is for someone who truly needs a low suspension, but I suspect not for you, just avoid the tall seats and tall seat settings and tall suspension settings.
