I'm not familiar with the 9-5 brakes, but I think they are just like my Viggen's. Basically, Saab chose to use the cheapest caliper style out there. It's a c-clamp style with a single piston. Basically, this doesn't put equal pressure across the pad due to the design since it has to pull one side, and push the other. There is also deflection on the clamp itself that causes uneven pressure on the rotor. For those that disagree, look at the wear on your rotor; I'll bet you'll see the outside (push side) will have significantly more wear than the inside face of the rotor.
Just look at the big brake upgrades and you'll see the piston on both sides which does a much better job of "clamping" and getting even pressures on the entire rotor. This creates stronger braking.
Don't get me wrong, the stock ones are fine for normal use. But when I'm at the track, and trying to brake hard for a quickly approaching corner, the stock brakes will not cut it (they won't even lock up the tires enough to trigger the ABS when I stand on them).. Also, if you are truely looking for "performance", your weight concern won't gain you anything much (hundreths); Better pads and calipers will make more of a difference since you can brake later than you could otherwise (tenths). Two piece rotors are best if you go through a ton of rotors since you just replace the wear surface instead of the whole thing. Just guessing here as well, but unless your a track monkey, you won't generate enough heat for cross drilling or slots to really make any difference. If you do track, you'll also be wanting brake ducts since the stock ventilation is non-existant so the stock setup can't disperse heat well.. The result is burning up your pads, boiling your brake fluid, metal fatigue, and distorting your wheels enough that the center cap goes flying :).
I'd also look at dual caliper for the front and single caliper to the rears as well as a proportioning valve for tuning the balance.
