Marty, what is wrong with the existing 8v setup? Whay are you considering this in the first place? If it so you can build up a hi-po motor, changing the head does not address any of the issues that make the 8v a less appealing performance platform, IE the CIS injection, older style APC, no intercooler etc. If it is a matter of the 8v being broken, such as by a cracked or warped head, you can buy a new one (which is what I did - they ARE available), or you can have it repaired. These guys have a good reputation: http://www.erikssonindustries.com/CylinderHeads.htm
In short, to echo others, simply putting a 16v head on an 8v block is a fiasco waiting to happen with little added benefit. Fix up (add a 16 valve IC, new style APC, look into the AID mod or add a BTM, maybe an Aquamist 1S system, add a good exhaust) and enjoy the 8v OR simply drop in the 16v you have floating around. Even though the 16v unit has high miles, it is the tranny that is likely to give out, not the engine. You may want to buy a turbo rebuild kit from swedish dynamics, easy way to keep that high mileage turbo from smoking or having the impeller or turbine rub on the case.
