It uses acceleration, velocity and position. Its basic physics, the same way you can calculate velocity and position at any point during a freefall by using the gravity of the earth.
Earths gravity is constant for most situations so it does not change over a certain distace. THe acceleration of gravity is 9.81m/s^2 at all points on a graph. Velocity at one second after begining a freefall is 9.8 m/s, at 2 seconds it is 19.6 m/s, at 3 seconds it is 29.4 m/2 and so forth. The distance that an object travels in total freefall at 1 second is 4.9 meters, at 2 seconds it has gone 19.6 meters, at three seconds it has gone 44.1 meters.
The g meter uses this same principle, but with varying accelerations.
