sounds like you've got the plan together, so I am not trying to suggest you should change it, but i have my FMIC plumbed in my 88 spg without cutting anything except a small portion of the oil cooler housing (which are dime a dozen to find/replace), and I maintained my stock A/C setup as is. I didn't have to do anything else.
Another thought, if you are not using your fog lights, you can use the fog light wire to power your on/off switch for your pump, since the wires are near where you may need them for your I/C water pump. That's what I did for my trans cooler pump, and it's nice not having to install an auxillary switch somewhere and keep the factory look.
