You might get a better response to this on the C900 board, it's been quite a few years since I've R&R'ed one of those engines. But I'll take a crack at it...
You definitely do NOT want to lift from only one point. I basically used 2 lengths of chain. One, about 18" long, has a hook on one end, hooked into the lifting eye near the thermostat housing. If I recall correctly, what I'd do with the other end is remove the A/C compressor (which would usually stay in the car anyway so you don't have to remove Freon), and use a 10mm bolt through a link of the chain and one of the compressor mounting bolt holes (I think the one closest to the intake manifold).
The other chain is the one that (typically) comes with the engine hoist. Use this chain to grab the one attached to the engine approximately in the middle. I think I used to go about 2 links toward the clutch end. I also would put 10mm bolts with nuts thru the links on the 1st chain on either side of where you're hooking on, to keep the hook from sliding toward one end or the other. It's pretty easy to tell if you've got the hook in the right position: start lifting with the hoist and see if all 3 engine mounts start to lift off at the same time. If not, lower the engine back down and adjust the hook position and try again.
