I do this because I live in the UK, and have been working in France quite a bit this year, running dwon from Normandy to Beaulieu, near Nice. A lot of these miles are on autoroutes and I have to say the French are more law-abiding than us Brits - mostly because in dry weather you can drive 130 kph, which is 81 mph. And on both main and minor roads traffic densities are far lower than I experience in southern England - France has our population in four times the space. Because the autoroutes work so well (OK, not on a weekend between Bastille Day and the end of August!) the smaller roads, which are usually straight and well-engineered, carry mostly local traffic.
Oddly enough, I find Paris traffic pretty civilised, perhaps because I drive in London. There are far fewer white lines and lane marking in Paris, and this can make people more cautious and/or co-operative. If you can hack London or New York you can handle Paris. Just plan your parking well ahead.
There are some exceptions. Audi and BMW drivers are just as noxious as they are on British motorways. The famous "priorité à la droite" lives on albeit in much reduced form, so if someone thinks he has priority he will drive out into your path even if you are just discovering the true meaning of Hirsch Performance. And watch out for Belgians - luckily easy to spot because of their distinctive number plates. Belgian drivers take no prisoners and seem to drive 10mph faster than anyone else, and if they can't get past spend their time inspecting your tail-pipe at close quarters. Maybe there's no extradition treaty.
