I don't know about the NG motors, but on pre-GM motors the valves on turbo cars were Stellite coated. It is not recommended to do a valve job on a Stelite coated valve, just a lapping to be sure it seals well.
Stellite is added to the valves with a welding process. A bead is run around the valve seating area and then it is machined down to give the valve the proper seat angle. Doing a multi-angle valve job has the potential of grinding off the Stellite coating and reducing the life of the valve.
