I have around 220 HP at the wheels and I can say that it is very fun. I don't think it's worth the extra money and frustration for much more than that! It's enough power to blow up stock trannies easily, but they will last if you drive it carefully.

You can get to 220 at the wheels pretty easily with bolt on stuff.
Getting to 300 at the wheels will require much more money and many more complications!

For 220 whp you will most likely need:
Turbo: $500-$800 depending on person
2.1 Head/Intake ported/polished: $2000
Injectors: $200
Fuel Regulator: $250
Modified APC: $200
Bigger Intercooler: $200-$1200 depends on what you do
Bigger Exhaust: $650-$1000
MSD 6BTM or AID: $200-$400

Water injection could probably substituted for a bigger turbo, but the price is about the same!

For 300 whp add in:
Cams: $400
Tranny: $3000
LSD: $1500-$2500 depending on supplier
New ECU: $1000-$4000 depending on what you choose
Fuel Pump: $300

The best thing you could do is just go to an aftermarket ECU and save yourself some money right off the bat. Many of us bought the band-aid stuff and then realized it doesn't produce enough HP and have to get rid of it all and buy the aftermarket ECU. For the cost of all of the band-aids, you could get a lower end ECU and have all the fuel/ignition control you need.

Jak has another option which involves swapping in a volvo fuel injection system and getting a chip through him. I like to be in full control of the system, so this option doesn't work out for me.

If you don't fully understand what these things do and how they work together, then I would just start small and gain a little bit at a time. It's more expensive, but you learn a lot more.
