Don't know where you got your data, but it's not correct. Here's my data. I use Beer/Johnston MECHANICS OF MATERIALS as my reference. All units here are in ksi.
ALUMINUM (7075-T6 Aircraft grade):
Ultimate Strength in Tension: 83
Ultimate Strentgh in Shear: 48
Yield Strength in Tension: 73
Yield Strength in Shear: n/a
STEEL (ASTM-A242 high-strength-low-alloy):
Ultimate Strength in Tension: 70
Ultimate Strentgh in Shear: n/a
Yield Strength in Tension: 50
Yield Strength in Shear: 30
However, none of these numbers really matters. We shouldn't be operating anywhere near yield. What we care about here is elasticity. You don't want the thing to bend. Modulus of elasticity in ksi:
ALUMINUM: 10400
STEEL: 29000
So a steel part is as stiff as an aluminum part that is three times the thickness. The KIC clamp is more than three times the thickness in one direction, and less in others. Overall, I'm sure that both have adequate stiffness, and I like the idea of your rubber gasket.
