On the drivers side door, turning the key counterclockwise locks the door. The door remains unlocked and you can push the door lock button to open the door at any time until you lock the door again by turning the key clockwise. On the passenger side door it is the same, except it is clockwise to lock, counterclockwise to unlock. I think of it as turning the key towards the front of the car to lock it, no matter which side you are on. Not sure what you mean by the lock is missing.
People do remove the large bumpers but you may want to check your State Motor Vehicle regulations. For instance, here in NYS, I have been told (unconfirmed)that you are required to have a rear bumper. I specifically looked for a Sonett with the small foam bumpers as I like how they look.
Manuals frequently come up on Ebay for sale. You will probably want at the very least a Haynes (or similar) V4 manual for the Saab 95 and 96, and the supplement Saab Sonett factory service manual. These are also available as reprints but are pricier that way.
