See my comments

1. K&N air filter:

stock filter is just fine.

2. Platinum plugs, which do y'all recommend?

Stock plugs. Either the NGK BCPR7ES for $8 a set then change them every year or two. Or the fancy stock-Aero NGK platinums that work just as well, cost more, last longer, and have a part number that I can't remember.

3. Synthetic oil + mobil 1 filter. The 9-3 folks suggest 0w40. Same for 9-5s?

That'll work just fine. Whatever you use should have an A3/B3 rating.

4. The car has Pirelli P zero rosso tires. Maybe 10k left on front. Gonna rotate. How are these in the snow? I had Dunlops on my 9-3 which were great. Used to use those scandinavian tires (forget the name) which were insane in the snow. Any consensus / wisdom for 17" all seasons that are a good combo for wet / dry? Snow is on the way here in the north and central east.

Insane snowtires: Nokian Hakkapeliita Q or something similar. Wonderful all seasons, great in snow: Nokian WR or WRG2.
