To me, the data suggests that you have a horizontal dead band from 83 to 115. So any temp reading in that range gives you a horizontal temp indicator. You could change those settings to make the dead bad very narrow I assume. Then you could watch the temp indicator fluxuate as the stat opens and closes. So I guess that you would want to set 2 and 3 to the same valve, or one degree apart. I think that the stats are rated for 89C, so perhaps you might try that temp or 90C for the horizontal.
When you do this, the reading will not be steady. It will be changing most of the time. So the indication will vary depending on when you look at it. If I was going to fiddle with it, I would try for a narrower dead band than 83-115, but I think the dead band probably has some merit.
