Unless you are addressing a specific problem with the valves, leave them alone. The valves on a 16 valve head should not be ground; this is stated in the manual. You need to replace defective valves. The biggest problem on these heads is the corrosion. Pitting should be repaired with epoxy before replacing the gasket.
A proper reconditioning of a 16 valve head will cost over $1000 for parts and maching shop work (that's excluding removal and installation). Anything less is corner cutting and a dubious investment.
