My previous remark about the Cosco gas was a guess based on my understanding of what happens to those pressure controlled 8 valve injectors as they age. There's a filter of sorts inside it, as well as a very fine passage. The large fuel filter within the engine compartment does a good job of filtering out most particles that make their way into the fuel system via the fuel tank. The final filter is within the fuel injectors themselves, which is the last thing gas passes through on it's way to the injector tip, which is a very fine channel. I can see that channel and tip opening getting clogged before I see the valve failing in the manner your mechanic suggested re stuck open. If it was stuck open, you'd get one cylinder being fed a lot of gas compared with the rest, which I'm guessing would be most evident during idle in the form of a bucking, possibly even backfiring.
A common age related failure is the injector valve leaking while the engine is off. There's a familiar test to find out if that is the case. A matter of observing (after removal) the injector tips with the ignition off after an appropriate warm-up time. The problem with a leaky injector in that situation is the development of what's called vapour lock within the fuel line (where the fuel vapourizes into a gas instead of remaining liquid) which results in warm engine start-up difficulties. But from what I understand, that condition wouldn't effect the catalytic convertor to the point where it overheats.
