I'm late to the party here and you said you followed the Bentley, but at the START of your process, did you remove the 14mm metal nut on the back of the caliper and pull the piston back by moving the hex screw counterclockwise? Or did you use a C clamp to push the caliper in? Not using the hex screw and forcing the piston with a C clamp or other tool ruins the rack mechanism that allows the fine adjustment.
Again, I didn't read all of your earlier posts, but I ruined my calipers once by not being aware of the correct procedure back in my early SAAB days. You should be able to insert new pads without having to adjust your e brake if it was working satisfactorally before you started the repair.
You may need to replace the calipers. Even if you did everything right, I find that design prone to problems as the adjuster mechanism fails due to age, rust, or use. Its pretty delicate.
I have an unused passenger side spare rebuilt if you need one.
