First, as 97Saab points out, tires make a MAJOR difference in handling and braking.
Second, you're comparing an 8 year old car to a new car tested by a professional. How are your shocks? Still original? How about the suspension bushings? The engine probably has a few more miles on it than the test car, and you can bet that when Saab provided it to the tester, they picked a good one. I'll bet that when they tested the car, maybe they had the tire pressure cranked up more than what you'd drive on the street. And many skidpads and test tracks have a nice layer of rubber laid down from previous testing. That makes for an almost ideal surface, something you don't find on the street.
I've also seen testers work. After they've tested a car, you don't want to own one afterwards. They'll get the tires nice and warm before the skidpad test, then grind the wheee out of them. It's not unusual for a car test to take out at least one set of tires.
When it comes to braking, it's the same. Warm tires, ideal conditions, warmed up brake pads. The difference between a warm and cold brake pad can be startling.
Numbers ain't good for nothing but boasting. Don't sweat it.
