If you are going to fix the head, I suggest taking it to a machine shop that specialises in fleet/racing rebuilds. Don't take your head to your Indy unless you see milling and boring machines in his shop, he'll just sub it to real engine rebuilders and charge you 7 times what he was charged.
Taking a head off isn't rocket science, but cutting valve seats accurately, milling heads and measuring clearances to 100ths or 1000ths of a millimeter is. They have thousands of dollars (probably hundreds of thousands)invested in cutting and measuring tools. Sure, you can do it by "feel", but its not going to be near what a rebuilder can do.
I had a head redone for another car I owned, the shop charged less than $150 labor. They took it apart, told me what parts I needed, I bought the parts and they installed them, they also milled the head. What I got back was a surgically clean head that looked brand new and worked perfectly.
