I probably don't know enough about this to comment but had a coolant sender problem on my Viggen. As I understand, one sender is for the temp gauge and the other is for the warmup cycle. Not sure which is the default on an open circuit (disconnected) so you may try to disconnect and see how the gauge behaves. Could also be a loose/dirty connection.
Why the engine would sound different I don't know unless it's running rich (warmup circuit is being told the engine is cold)?
As for the thermostat, if it were shot you would never have reached operating temperature. Some would argue that if it's old replace it. Others would say 'if it ain't broke, don't fix it'. I'd lean towards the replace it before it fails.
