I may be wrong, but opinion only, I would guess that most US high school auto shop teachers and programs will be much better off with a generic US make than with something "unusual" like a Saab (or any European car): manuals already in hand, flatter learning curve, etc. One of my sons' first car was a 1995 Saturn (admittedly we're talking about a daily drive beater, not an auto shop project) and I highly recommend it for boring, underpowered, unsophisticated, reliable basic transportation. It endured 40k miles of tough treatment and wasn't a money pit.
YMMV, and good luck.
/Geoff
