My preference would be to have an on/off switch. This is how it's done on many of the cars that have it.
As an option, it may not make sense. ESP, ABS, and Traction Control aren't just an extra box you stick on the car. Those systems are deeply integrated into the braking, throttle, and engine control systems. By deleteing it, you probably aren't saving a lot of hardware. But it costs a manufacturer a lot of money to maintain two different configurations - different wiring harnesses, control boxes, dashboards.....It all adds up.
It's one thing if the option they add is a defined box that costs a lot of money and you can just leave it out (e.g. CD player, or swapping a power seat for a non-power seat). But when the feature is spread throughout most every system in the car, deleting it just doesn't save much money in parts, but it adds a ton in tracking configuration.
