Hopefully she was OK. Bumpers are made for impacts, fenders are not. I was in the opposite scenario in which a Cavalier turned in front of me. I could not avoid her in time but steered mostly out of the way. My front left bumper hit her fender ahead of her wheel. Besides the body panels, my structure was not damaged, even the alignment was perfect. I drove home. Her car was toast with her wheel pushed inward, radiator busted, transmission inoperable. I know she wasn't in a Mercedes, but I was impressed with the Saab's safety in that case. As for the airbag malfunction light with your wife's accident, I can't comment if it was truly a malfunction. However, if the accident occurred at a low enough speed, the airbag is not supposed to deploy.
Any real world safety stats and ratings will show you that Saabs are probably the safest cars you can buy (for their size).
