Engine and transmission, as a unit, are attached to the body through solid rubber and rubber/fluid mounts. At the transmission end, it's simple rubber bushings (versus complicated fluid filled mounts at the engine). These are relatively soft, presumably to minimize noise and vibration, and therefore they allow some rotational movement of the power train. When you are working the clutch, the engine is moving around on you. This makes it harder to drive smoothly. The ultimate "soft" mount is a broken one, which allows the engine to jump all over the place and usually results in the car jerking and chattering when you let the clutch out. (obviously the standard car is nowhere near bad, but it's not solid either). The Talifiero bushings are made from a much stiffer material and therefore there's less engine movement as you work the clutch. This gives the whole powertrain a more "solid" feel. Many people prefer it this way.
I have to admit I'm just repeating the words of others - I haven't driven a stiff-mount equipped 9-5, but I have driven stock units and there is some truth to the assertion that there are cars that are easier to drive smoothly. Like the 9-3SS.
