You can make it to 200k, no problem with the V6. Sounds like you have a great car. I had a 2001 SE V6 for a few years (2006 to 2009) and really truly loved it. I bought it with 159k miles and sold it 2.5 years later with 184k. In that time period I replaced the timing belt, turbo, engine mounts, sub-frame bushings, and lots of other piddly things for a grand total of about $6,000. My father called it the money toilet and made a flushing sound and motion every time something went wrong with it followed by "you gotta love those BORN FROM JETS cars." I finally decided it was time to start making payments on a lower mileage (31k) 2004 9-5 Aero. That was a good choice.
Anyway, I bought my V6 from my father's boss, who had all the service history and everything, so I put it all in an Excel spreadsheet and added to it. Obviously this doesn't say much for you (maybe it will make you feel better though) but from about 120k to 165k the car was on REALLY good behavior. Other than rear shocks and a temperature sensor pretty much nothing happened for 45k miles. A DI cassette failed but yours should have been replaced by now.
I'm not sure what's up with your transmission. You didn't really give too much information about it other than it's shifting hard from 3 to 4. You said you replaced the upper transmission mount? And the lower one with 20k miles looks bad already? Honestly, when the lower (torque arm) mount is NEW it looks shot. There is so much slop and play in that stupid thing it's ridiculous. Genuine Saab just came out with a polyurethane bushing that goes in that mount to eliminate the slop. Mine is coming this week. People you have talked to are correct in saying the 9-5 transmission is bullet proof. It's made by Aisin Warner (sp), who supplies transmissions for Toyota and Lexus. BUT that doesn't mean they don't cause trouble every once in a while. A few on these boards have had them fail completely. Mine was strong when I sold it, and appears to be still going as I have seen the lady who bought it driving it around town. I know she has at least 190k on it by now. I'm not sure that you need to rebuilt the transmission right away. It could go on forever just shifting hard from 3 to 4, buy you never really can tell when it will just give up.
